Checks can be printed with whichever date you choose.

Yes you can print a check with a date other than today on the check.
When you click either the Print Check button on the individual Voucher or run the Print Check process from the Process tab, you have the ability to set the Check Date to be whatever date you desire. This is the date that will be on the actual printed (or virtual) check and it will also be the date in the journal entry that is created from the payment (typically credit to checking account, debit to accounts or grants payable).
Example: You might run the Print Check process on Wednesday and use Friday's date on the check. This allows you a few days to gather documents to enclose with the checks and to get appropriate signatures, or to even transfer money to cover the check amounts, but still have the Check Date equal the date the checks were put in the mail.
