I adjusted a gift, now I need to completely reverse it, but on the original gift I see that the Adjust Gift and Reverse Gift are greyed out. How can I reverse this gift?

Short answer:
You have to reverse the new adjusted gift that was created during the gift adjustment, you will no longer be able to adjust the original gift because that would have been reversed during the adjustment and a new adjusted gift created.
Detail:
When you adjust a gift in FIMS, there are two line items that get created in the unposted gift tab - one that reverses the original gift being adjusted and a second one with the new adjusted gift. To complete the adjustment, you post the reversal and the new adjusted gift together from unposted gift tab.
The new adjusted gift replaces the original gift and that new adjusted gift is what you work with for any future adjustments or reversals.
After you complete the adjustment, you can no longer edit the original gift because that gift was reversed. In this screenshot you can see where gift #00792 is the original gift, but it was adjusted and as such the adjustment gift and Reverse gift buttons are greyed out because when you do a gift adjustment, the original gift is reversed. You can also see here that gift #00825 is the new adjusted gift which is what you would need to work with:

NOTE: You can easily find out which one is the adjusted gift by looking at the title bar on the gift records:
The title bar for the Gift indicates whether it is the original Gift, a reversal, or an adjusted Gift. The original Gift's title bar will display the Gift number for the adjusted Gift, and the reversal and adjustment title bars will display the Gift number for the original Gift.
- After adjusting the Gift, the original Gift will get an Adjustment Type code of S (source gift).
- The reversing Gift will get an Adjustment Type code of R (reversal).
- The new adjusted Gift will get an Adjustment Type code of A.
